A Harvest of Record-Breaking Aszú Berries
Due to an extended winter and delayed bud burst and flowering, the grapes ripened later than usual. A hot summer was followed by a cooler, rainy September, and noble rot made a relatively late appearance. Fortunately, this resulted in an abundance of intense and magical Aszú berries.
Hand harvesting of the berries for our Aszú wines commenced on September 23rd and continued until mid-November. We gathered a record-breaking quantity of high-quality Aszú berries through meticulous and repeated selection. These berries were aromatic, fragrant, and richly infused with noble rot.
The Birth of a Marvelous Aszú
Approximately one-fourth of the total quantity comprised the most concentrated and fully shriveled Aszú berries. These berries, consisting of 50% Furmint and 50% Hárslevelű, were blended into fermenting must. The remaining intensely botrytized berries were soaked in base wine, also made from Furmint and Hárslevelű, during the final stage of fermentation. After maceration and slow pressing, fermentation occurred in stainless steel tanks and partially in oak barrels.
Made from 75% Furmint, 15% Zéta, and 10% Hárslevelű Aszú berries, the wine was matured in 225-liter oak barrels in traditional underground Tokaj cellars for approximately 20 months. Bottling took place in June 2016.
Our 2013 Disznókő Tokaji 5 Puttonyos Aszú is a brilliant golden-colored wine that has grown even more aromatic over ten years. It exudes an intense floral aroma with apricot, plum, and nectarine notes. Rich and creamy, it possesses a pleasantly rounded acidity and citrus flavors. With 12% alcohol, 156g/l residual sugar, and 7.6g acidity, it embodies a round, vibrant, fresh, complex, and concentrated character.

Recommended food pairings
Thanks to its balanced sweetness and lively acidity, the 5 Puttonyos Disznókő Tokaji Aszú is an excellent choice. We recommend serving it well chilled as a refreshing aperitif or as a dessert substitute at the end of a meal. It pairs wonderfully with poultry dishes with different sauces, risotto containing mushrooms or seafood, and mildly spicy East Asian dishes like Thai green curry chicken. It is also a perfect choice alongside less-aged, not overly salty blue cheeses, accompanied by some fruit such as apricot, pear, or fruit salad. Additionally, it pairs well with fruit-based desserts like fruit tart or mandarin sorbet.
The Disznókő Tokaji Aszú 5 Puttonyos 2013 is already drinkable but has long aging potential. To fully showcase its finest characteristics, serve it at 11-13°C.
