Disznókő Tokaji Aszú 5 Puttonyos 2014 – A Timeless Classic

Our Disznókő Tokaji Aszú 5 Puttonyos 2014 retains its beauty for decades, evolving with new layers of complexity over time. Its creamy, rich flavors, fresh acidity, and mineral notes make it far more than just a dessert wine.

2014 – A Vintage of Fresh Wines

After a hot and rainy summer, the 2014 harvest in the Tokaj wine region was particularly complex. Protecting the vineyards and ensuring high-quality fruit required patience, humility, and meticulous care.

High humidity caused noble rot to start on nearly all the berries quite early, demanding extraordinary attention and careful selection. While the total yield was low, the proportion of aszú wines was remarkably high. The selection of aszú berries began in early September and continued throughout the harvest season.

The intensely botrytized aszú berries were selected in three phases. The harvest began on September 4th with Zéta grapes, followed by Furmint on September 18th. The final, third phase of aszú selection ended on October 29th. Most of the aszú berries came from the second harvest. Each berry was individually picked and stored in stainless steel vats until vinification.

An Exciting Aszú was Born

Two-thirds of the aszú berries were macerated in freshly finished wine, consisting of a 50-50% blend of Furmint and Hárslevelű, for half a day. The most concentrated, shriveled aszú berries were soaked in a heavily fermenting must for two days, with regular pump-overs to enhance extraction. After pressing, fermentation continued in stainless steel tanks.

The final blend, made from 69% Furmint, 25% Zéta, and 6% Hárslevelű aszú berries, was aged for 18 months in 225-liter oak barrels, stored in traditional underground Tokaji cellars. Bottling took place in August 2017.

Disznókő Tokaji Aszú 5 Puttonyos 2014 is a radiant golden colored wine that has grown even richer after a decade. Its intense aroma combines botrytized notes with spicy, aromatic herbs, dill, citrus, fresh plum, and mint, creating a distinctive character.

This is a rich aszú with higher acidity than usual, well-balanced fullness, and a long finish. It offers flavors of peach, plum, and nectarine. With an alcohol content of 12%, 156g/l residual sugar, and 8.77g acidity, it is lively and fresh, exciting and elegant.

Food Pairing Suggestions

Thanks to the vibrant acidity balancing its sweetness, the 5 Puttonyos Disznókő Tokaji Aszú is an excellent choice on its own, but it also pairs beautifully with a wide variety of dishes. Serve it well-chilled as a refreshing aperitif, or enjoy it at the end of a meal instead of dessert.

It is a fantastic accompaniment to poultry dishes with creamy sauces and risottos with mushrooms or seafood. It pairs wonderfully with lightly spiced East Asian dishes like Thai green curry chicken. It is also an excellent match for younger, less salty blue cheeses, alongside fruits like apricots, pears, or fruit salads, or with fruit-based desserts such as fruit tarts or mandarin sorbet.
